Er liebt das Aostatal, insbesondere Cervinia, und hat sich entschieden, das Restaurant Parete Nord im Hotel Bucaneve zu leiten.<\/p><p>Seine kulinarische Reise f\u00fchrte ihn von seinen fr\u00fchen Erfahrungen in der Schweiz \u00fcber die Br\u00fcder Vai zu &#8222;La Cassolette&#8220; in La Salle und &#8222;Piccolo Lago&#8220; in Mergozzo bis hin zur Leitung seines eigenen Restaurants &#8222;3uno&#8220; in Oleggio.<\/p><p>Seine Kochphilosophie zeichnet sich durch eine ausgewogene Mischung aus Innovation aus, bei der er italienische und valdostanische Gerichte neu gestaltet, ohne dabei die essentiellen Aromen zu vernachl\u00e4ssigen.<\/p><p>Seine Gerichte reichen von dem klassischen Prosciutto di Bosses, einer Spezialit\u00e4t des Aostatals, bis zu roten Garnelen aus Porto Santo Spirito in Apulien, von Hirschsteaks mit Waldbeerengelee bis hin zu seinen \u00fcberraschenden Desserts, die die G\u00e4ste faszinieren.<\/p><p>Es w\u00e4re eine Untertreibung, seine Gerichte einfach als Dekoration zu bezeichnen. Sie sind kleine Kunstwerke, die den Inhalt hervorheben.<\/p><p>Der Chef Claudio ist auch ein gro\u00dfer Kenner von Gin: Diese Eigenschaft wird die G\u00e4ste auf eine ganz besondere Verkostungsreise
